15 Breakfasts I’m Loving Right Now

Breakfast is a challenge. We need options when we’re running out the door, loading kids into the car, and barely have time to fill our thermos with water. 

So, I’ve made a list for you. Here are 15 fast breakfasts I’m loving right now. 

 

Egg Bites

These egg bites are so easy to make. They’re low calorie, high protein, and versatile. Use whatever veggies you like. Then blend together egg whites with cottage cheese. You’ll end up with 12 muffins that you can grab and go. 

They’ll store in the fridge for 3-4 days or in your freezer for 2 months. 

Each muffin contains 25 calories, 0.5 grams of fat, 0.5 grams of carbs, and 5 grams of protein. So you can eat them to your fill! 

 

Egg McMuffins

My whole family is obsessed with these Egg McMuffin dupes. I have to make a huge batch or they’ll be gone before I get my share. 

They’re loaded with 30 grams of protein but hit under 375 calories. 

What makes this recipe so easy? Cooking the eggs in a sheet pan. They cook in about 15 minutes. Then it’s just a quick assembly of English muffins, Canadian bacon, cheese, and the egg bake. 

They warm up beautifully in the toaster oven. This is a great way to start your day with 30 grams of protein. 

 

Overnight Protein Oats

When mornings are hectic, these overnight oats are a lifesaver. 

All you have to do is throw five ingredients in a bowl the night before. This recipe uses clean fiber and protein packed ingredients (no protein powder needed). The end result (using unsweetened soy milk) clocks in at 500 calories and 30 grams of protein. 

It’s a filling breakfast you can grab out of the fridge to stay satiated for hours. 

In the morning, grab a handful of raspberries for a bright and fruity topping. 

 

Overnight Chia Pudding 

This one I have memorized. It’s another go-to when I know the next day will be a major hustle. 

Grab a jar and stir together: 

  • 1 cup nonfat Greek yogurt
  • 1 cup unsweetened almond milk
  • ¼ cup chia seeds
  • 1 Tbsp maple syrup
  • 1 tsp vanilla

 

This recipe contains 534 calories and 43 grams of protein, and it’s incredibly filling! I love adding blueberries to top this creamy, sweet breakfast. 

 

PB&J Greek Yogurt Parfait

Try one, and you’ll be hooked. These creamy, rich, and sweet yogurt cups feel incredibly indulgent. 

Picture this: Yogurt whipped together with vanilla protein powder, creamy peanut butter, and rich peanut butter powder. And if this nutty, creamy base wasn’t enough, you’ll then layer it with strawberry chia jam. I love to top it all with some crushed roasted peanuts. 

 

Satiating Strawberry Smoothie

Don’t freak out when you see the ingredient list of this smoothie. Yes…it does contain cottage cheese. But you have to try it before you knock it. If you didn’t know about the cottage cheese, you’d think you were sipping on a decadent, creamy treat, resembling a milkshake more than a fruit smoothie. Try this hack if you’re looking for high-protein breakfasts without dumping in a scoop of protein powder. 

 

Superseed Granola

Whole grain rolled oats, hemp seeds, puffed quinoa, and pepitas give this protein its satisfying crunch. Then, pea protein crisps and chia seeds ramp up the protein. 

I love to make a yogurt or smoothie bowl with a big handful of this granola on top. On speedy mornings, I’ll pour a bowl of this granola, then grab a few of my egg bites to complete the meal.

 

Baked Pancake Bowls

Have you tried these yet? You’re about to get on a pancake bowl roll. 

These delicious, fluffy, baked pancakes are so simple, but you’ll feel more queenly with each sweet bite. Here’s another go-to that packs in a decent amount of protein (27 grams per serving) without using any protein supplements. 

 

Sprouted Bread French Toast with yogurt and berries

Let me change your breakfast game with this amazing recipe. 

Girl, you’re going to be eating this for days. It’s unbeatable. 

It goes something like this: 

  • Heat a frying pan with a bit of coconut oil
  • Whisk together 1 large egg, ¼ cup egg whites, and a dash of cinnamon
  • Soak two slices of Ezekiel bread in the mixture
  • Fry on both sides until golden brown.
  • Top with ½ cup nonfat Greek yogurt, ¼ cup raspberries, and 2 Tbsp maple syrup

 

It’s french toast that tastes delicious but won’t give you that terrible blood sugar crash midmorning. This recipe clocks in at 520 calories and nearly 40 grams of protein. 

 

Egg and Sausage Muffin Biscuits

If you’re into the sausage-biscuit combo, you’ll love this recipe. These bad boys are so easy to make, and your whole family will love them. I make a huge batch, throw them in my freezer, and grab them as needed. 

Each biscuit is under 300 calories and packs in almost 20 grams of protein. 

 

Avocado Toast with Burrata

Burrata translates to “buttery” in Italian, which perfectly describes the rich and creamy texture of this cheese. Pair it with sliced, ripe avocado, then top it with fresh basil and chopped chives, and you’ve just transported to southern Italy for breakfast. 

I make this recipe on Hero Bread, then swap half the avocado for a large poached egg. It’s out of this world. Make it.

 

Cottage Cheese Fruit Cups

A classic combo for a reason. This recipe adds its own twist (or shall I say “blend”) by whipping the cottage cheese first. Whether you like a curdy or creamy texture, you can throw together a high-protein, satiating breakfast in minutes. 

 

Shakshuka with Feta

Bold flavor, high protein, crowd pleaser…there’s a reason Shakshuka has had a moment in the spotlight. 

This one feels like a Sunday morning breakfast, as decadent as it appears. But it’s all made in one skillet, then served in that same skillet, making cleanup quick. 

Oh, and don’t be fooled by the small portions in this recipe. My hub and I split the skillet. 

 

Sweet Potato Hash

Need breakfast prepped? When weeks are extra busy, whip out this recipe. It combines a list of clean ingredients without sacrificing flavor. You can cook once, dirty one pan, and be done with early morning kitchen duty for the week. 

 

Smoked Salmon Toast

It’s just a pile of food on a piece of bread, but you will feel so spoiled by this breakfast. 

You start off with sourdough bread. Spread on cottage cheese. Drizzle with hot honey. Pile on arugula, smoked salmon, and pickled red onions. Sprinkle it all with everything bagel seasoning. Then, eat a second slice.
