5 simmering soups for fall

The weather is starting to cool down, which always puts me in the mood to throw a pot of soup on the stove or into the crockpot. I’m always looking for some new recipes but have a few tried and true ones too, so I wanted to share some with you! All these soups are gluten and dairy free, macro friendly, and full of nutrition. Enjoy!

1) Creamy cauliflower soup

This soup is so comforting and nutrient dense. Add bacon and sliced green onion on top. So good!

2) Creamy Roasted Carrot soup 

This vegetarian soup is smooth and silky. The roasted carrots are super sweet but the Indian spices give such an interesting flavor profile. This is fall in a bowl. So good!

3) Chicken and leek soup

This is not your mother’s chicken soup. The leeks add a new flavor, and I can throw in whatever other veggies I have in the fridge that need to be used. Delicious!

4) Kale and sausage soup

I love kale in anything! So nutrient dense and colorful. This soup is super versatile. You can use whatever kind of sausage you want (pork, turkey, or chicken) and add potatoes or sweet potatoes instead of the cauliflower. Super hearty and filling!

5) Green chile chicken soup

I love the Mexican flavors of this soup, and it’s an easy one to throw into the crockpot. Super low in calories, I like to add sliced avocado on top for some healthy fat. You can even add potatoes, beans, corn, or rice to add in some good carbs. Your whole family is going to love this one!
